Chicken Picadillo with Dikon Radish

Hi! Did you know that you can come up with a yummy dish from ground chicken and dikon radish?

I didn’t (or at least wasn’t so sure) until I ran out of dinner ideas last weekend😂. It was too cold to go out and I figured I have to do something with those fantastic looking radishes in the fridge. Well, I would have eaten those merely sliced and raw but I have my boys to feed and nope, they won’t take sliced radish for dinner! So I googled some recipes and finally decided to “personalize” my dikon and chicken recipe by making picadillo. It turned out really good, hubby liked it! I added carrots and bell pepper mainly for color but I think the dish will be just fine without them😉.

Ingredients:

1 medium sized dikon radish, julliened

1 small carrot, julliened

1/2 green bell pepper, julliened

2 cups ground chicken meat

3 cloves garlic, minced

1 small onion, sliced

2 tbsp soysauce

1 tbsp oyster sauce

1 tbsp cooking oil

1 tsp sesame oil (optional)

2 pcs bayleaves

2 tsp ground black pepper

salt to taste

Method:

1. Saute garlic and onion in cooking oil.

2. Add ground chicken and bayleaves; Saute until lightly browned. Season with soy sauce, oyster sauce.

3. Add chopped vegetables and toss; cover the pan and simmer on medium heat until vegetables are slightly wilted.

4. Season with salt if needed but cracked black pepper is a must. In fact it adds much needed zing to the dish.
